Taking up the Apron – Baked Butternut Pumpkin

Purchased a Butternut Pumpkin from Woolies the other day in attempt to try something new! Found a pretty fuss free one which only involved baking it. Of course, I had to adjust the recipe to suit my needs. This is how it turned out!

I added some toasted bread and olive oil spread for some crunch to go with the tender pumpkin.

I substituted parsley with Spinach because it was the only existing vegetable I had on with me. Love how it ended up crunchy after baking it in the oven with the pumpkin. I added a few more Spinach leaves and some mozzarella, parmesan and cheddar cheese after immediately taking it out of the oven.

Definitely something I would bake again!
